LIH Spotlight: Pony Express Hero

It’s June, and that means four new stories from
Love Inspired Historical will be hitting shelves.

This week I’m shining the spotlight on
Pony Express Hero by Rhonda Gibson,
the second book in her Saddles and Spurs series.

Pon Express Hero

Bound by a Child

Pony Express rider Jacob Young is a man of action, which is why when he sees a little girl caught in the middle of a stampede, he races to her rescue. And he soon discovers the child is the half sister he hadn’t known he had. The more time Jacob spends with adorable Daisy and her beautiful guardian, ranch owner Lilly Johnson, the more he realizes they’re filling all the lonely corners of his heart.

Wary Lilly can’t deny the cherished feelings that overcome her when Jacob vows to protect her and Daisy from any harm. And she can’t help but hope that maybe they can put their past hurts aside and forge a future together as a full-fledged family.

Fun Question for Rhonda…

I saw on your website that you have a fondness for Mexican food, as do I. Which Mexican dishes are your favorites?

Rhonda says: “I love Mexican food. Being from New Mexico, I love Green chili smothered burritos 🙂 and Sapodillas. So yummy.”

Your Turn…

Are you a fan of Mexican food? If so, what dishes do you like best?

  • I like tacos, enchiladas and some burritos BUT definitely NOT spicy ones.

    • Keli Gwyn says:

Wendy, my husband isn’t a fan of spicy food either, but he knows I like spicy bean burritos with extra green sauce from Taco Bell. He brings one home to surprise me from time to time. Is that love, or what?

  • Dana Michael says:

I love all mexican food. Buy I love tacos and burritos best.

    • Keli Gwyn says:

Dana, it sounds like you’re quite adventurous when it comes to Mexican food. I tend to order the same items. I have favorites at different Mexican food restaurants. Do you?

  • Melody says:

Haha I love, love Mexican food. Or the variations of it anyway! I work at a restaurant, and we have on our wall 100 percent non authentic! Lol My boss just created a menu based on how he likes to eat food! But it’s the best! I eat there every day I work, sometimes for all three of my meals. And I am still not sick of it, so it must be good. 😉
I love it all, but fried enchiladas are my favorite as of late! That’s not anything on our menu, but as workers we do what we want as far as eating goes! It’s the greatest!
I like it with red sauce as its spicier. I am a spicy girl, living in a world of non spicy people. Lol
My boss will make for us only spicy red salza, different from the kind we sell to customers, as that has to be mild! Love it!

    • Keli Gwyn says:

Mel, it sounds like you work at the right place. You get to enjoy Mexican food on a regular basis and even get to savor special treats made just for you and your coworkers. What fun!

      • Melody says:

Haha for a food girl like me, it’s the best! I love to eat, probably as much as I love to read!! 🙂

        • Keli Gwyn says:

Sounds good to me, Mel. I combined the two at dinner. I sat at the local Fresh Mex eating my burrito bowl while reading. That’s my kind of multitasking. =)

  • I love cheese enchilada’s. No matter where we have Mexican food I always order 2 cheese enchilada’s, beans and rice. Of course I make the best cheese enchilada’s! Homemade is always better 🙂

  • jane naccarato says:

Enchiladas and tacos but when I go to Carlitos I always try something new off of the menu. If I go there enough I will have had everything on the menu a least once. It will probably take a couple of years because I only go out to eat when friends are in town.

  • Merry S. says:

My favorite Mexican foods are chicken enchiladas, beef tacos and refried or black beans.

  • Trixi says:

I love, love, love Mexican food!!!! My favorite dishes are tamales (homemade) and enchiladas. My favorite restaurant here in town is Mazatlan, a family owned place to eat and they are always friendly. As soon as you sit down, they feed you hot tortilla chips and a dish of homemade salsa 🙂 Yummmmyyyyyy!!!

Thanks for featuring another great LIH, Keli! I’m sharing on FB.

    • Keli Gwyn says:

Trixi, homemade tamales would be a real treat. Are they a lot of work to make? I would imagine so.

      • Trixi says:

I’ve only made tamales from scratch once with the help of a Mexican lady that attended one of the churches we went to years ago. And yes, it is quite a bit of work, but as with anything homemade, SO worth it!! You can taste the labor of your love 🙂

        • Keli Gwyn says:

Trixi, what fun it must have been to learn how to make tamales from your church friend the authentic way. I’m sure they were delicious.
